I have a confession to make. I have always wanted to make homemade salsa but have always been too afraid to try...that, and up until last Christmas I didn't own a food processor and wasn't about to attempt it without one. We planted lots of peppers and tomatoes in our garden this year and while our peppers did great, our tomatoes didn't do so hot (at least at the time...now, we have quite a few!) Not wanting our peppers to go to waste, I found a recipe and went and bought some tomatoes. Here we are at the beginning of salsa night with Cooper being my little helper. He insisted on putting everything he could into the food processor.Pure joy on his face! He was clapping for himself just a few minutes before this photo was taken. He is also saying "cheese" for the camera. He likes to do this around our house but ask his Grandpa Swenson to take some professional pictures and he bawls the whole time...the little stinker.Dan insisted that I get my picture taken as well, especially since I had borrowed his orange long sleeve shirt (which by the way is super comfy). He kept referring to me as "pumpkin" most of the night which I did not appreciate. I am at least 8 months in this picture...once again, 5 more weeks and I can start to lose the weight! :)
The final product:And the food critic taking his first bite (he approved!):I ended up freezing some of the salsa since it made a gigantic bowl full. Frozen salsa actually keeps really well and we've enjoyed having homemade salsa over the last month.
Yum.... so what kind of peppers did you guys plant? Cort loves helping in the kitchen too... it's fun that they are getting old enough to "help".
